Craving a cinnamon bun?? Oh c’mon, you don’t need it! Have this instead! A friend shared this recipe with me that she found on a new favorite site of mine Lexi’s Clean Kitchen. I had some nanners that needed to be used, and the next thing you know I had these babies. Let me tell you, these things are YUM!!!
INGREDIENTS:
(makes a small batch of 6)
- 1/2 cup almond flour (or Trader Joe’s GF flour)
- 1 1/2 tsp coconut flour (I just used shaved coconut)
- 1/8 tsp salt
- 1/4 tsp baking soda
- 1 1/2 tsp coconut oil
- 1 egg
- 1 1/2 tsp organic pure honey
- 1 tsp organic vanilla extract
- 1 ripe banana, mashed
- 1 tbsp cinnamon
- 1 tbsp + 1 tsp maple syrup
- 1 tbsp coconut oil, melted (sub grass-fed butter)
1. Preheat oven to 350 and spray silicone muffin tins
2. In one bowl combine almond flour, coconut flour, baking soda, and salt
3. In a separate bowl combine egg, coconut oil, honey, and banana – mash and mix well.
4. Combine wet and dry ingredients and mix well
5. In a small bowl combine topping ingredients and whisk together
6. Pour muffin batter half way into muffin tins
7. Pour about 1 tsp of the topping mix into the center of the muffin
8. Top off with remaining batter
9. Sprinkle the rest of the topping mix on top of the muffins
10. Bake for about 20 minutes or until a toothpick comes out clean
11. Store in fridge
