Salad Season!

Since doing more personal training these days, I have less time to work out myself, so when you have to back off working out –  it’s all about what you eat.

Many people ask all the time what I eat, and my usual response these days is protein and veggies, protein and veggies – PROTEIN AND VEGGIES!!!!  I tend to eat a lot of the same things, and lately have found a salad that I eat pretty much every single day.  People also ask if I’m gluten free.  I’m not totally, but I try to stay away from gluten when I can.  I find that I feel better overall when I stay away from gluten, but if I want it – I’ll have it in moderation.

I’ve put a lot of these ingredients and this dressing on my blog before, but I thought I’d post this particular salad and dressing because it’s THAT good and THAT filling.  Simple, fresh and great for summer!  Try to get good ingredients because that will make all of the difference.  I usually get everything at Trader Joes!  Also, there’s quinoa under there, but you can’t see it!  So…here you go!  Enjoy!!

Megan’s Favorite Summer Salad!

Spinach
Carrots
Dried cranberries or cherries
Avocado
Almonds
Celery
Quinoa (cooked according to the directions)
Edamame

Apple Cider & Honey Vinaigrette

1/4 cup of olive oil
2 tbsp apple cider vinegar
2 tbsp honey
black pepper

DIRECTIONS:  

Cook the quinoa according to the directions.  (I like to use chicken stock to cook it in).  Let the quinoa cool.  Combine ingredients.  Mix salad dressing ingredients separately and then pour over the salad.  You’ll probably have extra – don’t use it all on a salad for one and drench it!  🙂
